Mwah (sic). Here I'm nineteen years old. I'm traveling through Iran overland with three classmates from American University in Cairo. Laurie Parrish and David Parrish, brothers from Connecticut. And John ?? from Indiana. Iran. A friendly, peaceful place back in those days.

The restaurant’s been gutted, polished, and rechristened since I last darkened its door a good many years back. It still sits on the top floor of the Joseph Smith Building, just a stone’s throw east of Temple Square, looking down on the Salt Lake Temple like a proud uncle after the august edifice finally finished its seven-year renovation.

I ate there with TIMDT, Portland, and Mark and Lisa (TIMDT's nephew and niece) who’d flown in from Arkansas. The temple glowed in the background, all fresh limestone and new dignity, as if it had just come home from the spa. I liked the place. I’ll go back.

What tickled me most was how the kitchen leaned hard into Mormon culture instead of pretending it wasn’t there. Beehive rolls. Funeral potatoes. Honest-to-goodness comfort food with a pedigree.

There’s a business idea sitting right there on the table, if anybody’s paying attention. Open a restaurant that goes the whole distance on homestyle Mormon family cooking—the real stuff, not the dressed-up version. Jell-O salads that wobble with conviction. Beanie weenie casserole. Chicken and rice casserole. Potato chip, mushroom soup and tuna casserole. Those dishes that somehow taste like Sunday afternoon. Call it an antidote to the whole frilly Michelin circus. I’m dead serious. My favorite dish on earth is still my mom’s mac and cheese, and I suspect I’m not the only one.
